Weight Watchers Creamy Yogurt Cucumber Salad!!!

Sometimes you get bored of eating the same thing every day. Regular salads can get a little repetitive, so why not change it up with something completely different? This Creamy Yogurt Cucumber Salad is the perfect new side dish that will you out of that salad rut! Healthy and delicious, this salad is perfect if you are looking for a low-calorie meal for yourself, or even to bring with you this holiday season. Check out the recipe below.

Ingredients   [ For 4 to 5 people ]    [   Preparation time : 12 minute  –  Cooking time : 15 minutes  ]

  • 1 cup non-fat plain Greek yogurt
  • 1 cucumber, ends removed
  • 1/4 red onion, thinly sliced
  • 1 clove garlic, pressed or minced finely
  • juice from 1/2 lemon
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground pepper

Preparation Method

  1. Slice a cucumber into thin pieces. Cut the onion into thin slices.
  2. Add the onion and cucumber to a bowl, and top with the Greek yogurt.
  3. Add the garlic, lemon juice, fresh dill, mint, salt and pepper, and toss.
  4. Serve at your next event or bring it in for lunch sometime!
