I’m not gonna lie — these rollups were one of those “let’s just see what happens” kind of kitchen experiments. It started with leftover ground beef from burgers the night before, half a pack of bacon, and a lonely tube of pizza dough sitting in the fridge. I wasn’t planning on making anything fancy… I just wanted something really good without a lot of effort. You know those moments where you’re hungry but you also want comfort? Yeah, that’s exactly where this came from.
And wow — it hit the spot.
The first bite was all gooey cheese and smoky bacon with that buttery garlic crust that made it taste like a cheeseburger decided to crash into garlic bread. It’s messy, a little indulgent, and 100% worth it. I made them once and now it’s officially “movie night food” in my house. You can eat them with your hands, they smell incredible while baking, and they disappear fast — like way too fast.

They’re also great if you have people over and don’t want to deal with burgers and buns and all the mess. These rollups have all the same flavors but in bite-size form.
Ingredients
1 lb ground beef
½ cup cooked bacon, crumbled
½ cup shredded cheddar cheese
¼ cup diced pickles
Salt and pepper to taste
1 tube refrigerated pizza dough
¼ cup unsalted butter, melted
2 cloves garlic, minced
1 tbsp fresh parsley, chopped (for garnish)
Ketchup and mustard, for dipping

Directions
- Preheat & prep.
Set your oven to 400°F (200°C) and line a baking sheet with parchment paper. - Cook the beef.
In a skillet over medium heat, cook your ground beef until browned, breaking it up as it cooks. Add some salt and pepper, then stir in the crumbled bacon. Take it off the heat and let it cool for a few minutes — it’s easier to handle that way. - Build the rollups.
Roll out the pizza dough into a big rectangle. Spread the beef and bacon mixture evenly on top, then sprinkle with cheddar and diced pickles. - Roll it up.
Starting at one end, roll the dough into a tight log. Slice it into about 1-inch pieces — kind of like you’re making cinnamon rolls, but, you know, the savory kind. Lay each one flat on your baking sheet. - Add the garlic butter magic.
Mix your melted butter with the minced garlic, and brush that goodness over each roll-up. Don’t skip this part — it’s what takes them from good to holy crap, these are amazing. - Bake & finish.
Bake for 15–18 minutes until they’re golden and the cheese is bubbling. Garnish with parsley if you want to look like you have your life together. Serve warm with ketchup and mustard for dipping.

Recipe FAQs
- Can I use something other than pizza dough?
Yeah, crescent roll dough works great too — it’ll be softer and a little more buttery. If you want it more like bread, pizza dough is the way to go. - Do I have to add pickles?
No, but they add that “burger” flavor that makes these taste legit. If you’re not a pickle person, maybe toss in some diced onions or jalapeños instead. - Can I prepare these in advance?
Sort of. You can roll and slice them earlier in the day, then keep them in the fridge until you’re ready to bake. Just brush with butter and bake fresh so they stay crispy. - What cheese works best if I don’t have cheddar?
Anything melty — Monterey Jack, Colby, or even mozzarella. Just avoid something too mild or it’ll lose that classic cheeseburger vibe. - How do I keep them from unrolling in the oven?
Roll the dough tight and place the slices seam-side down on the baking sheet. If they still open a bit, don’t stress — the gooey cheese kind of glues them together once they bake.
